Lorena is an incredibly creative chef and can prepare dishes dependent on guests culinary preferences. All our food is prepared from fresh local produce delivered daily and served in our open-air restaurant set in the middle of the forest. We have a wonderful range of vegan and vegetarian options in addition to freshly caught seafood and local meat produce.
On days when you don’t have an early tour, why not enjoy a steaming cup of famous Guatemalan coffee, fruit and freshly baked bread on the terrace of your casita as you watch the sun-rise over the lake?
Or join us in the dining room for a selection from our breakfast menu including; pancakes, eggs, beans, tortillas and home-baked bread served with fresh juice and tea or coffee. Our breakfast menu can be served throughout the day so you can set your own pace.
Our dinner is served in the restaurant around 7 pm depending on the time tours arrive back. All dishes are bespoke and the menu varies daily. If guests have specific preferences or requests we aim to accommodate. Sample dishes include; Local Prawns Al Termidor, Curried Shrimp, Zucchini Salad, Vegan Lasagna, Stuffed Bell Pepper. We’re quite modest at Nitun so we’ll leave it to our guests to tell you how good our food is…

If you love coffee…really great coffee, we have some of Guatemala’s finest coffee right here at Nitun Lodge. Our coffee comes from Kalibus La Sierra Farm, located in the cloud forest of the Sierra de Las Minas Biosphere, and owned by Lorena’s father, Pompeyo Castillo. This outstanding coffee won the Alliance For Coffee Excellence’s prestigious Cup of Excellence in 2014 and 2016.
